Function :  It acts as dough conditioner, dough strengthening for better volume and grain structures with      anti-staling properties to help increase shelf life of baked products. Ideal for the production      of soft breads and other bread alike.

 Usage  :  0.5% to 1.0% based on total flour weight

FALCON Instant Dry Yeast for Baking Industry

 

Description : Falcon Instant dry baker’s yeast, suitable for high sugar dough varying from 5% sugar    and above based on flour weight.

Appearance : Free flowing granular cylindrical rods

Color  : Beige to light brown

           Instant Dry Yeast    : Saccharomyces Cerevisiae

           Rehydration agent : Emulsifier: Sorbitan Monostearate E491

           Oxidizing agent       : Ascorbic acid E300

DOSAGE

Recommended to be used with sugar dosage varying from 5 – 30%, based on flour weight.

The right dosage depends among others on application, recipe, type of process and process circumstances and therefore should be determined by baking tests.

 

STORAGE / KEEPABILITY

 Store in a cool and dry place (20°C)

 When storage temperature is higher than indicated, faster declination of activity cannot be avoided.

 Provides consistent proofing time from one batch to another.

 

 Shelf life is 2 years in closed packaging from the production date and within above-mentioned storage  conditions.

Description : Instaferm® GOLD Instant Dry Baker’s Yeast is instant dry baker’s yeast with      considerably higher fermentation activity than traditional yeasts. It is a specially     selected strain of Saccharomyces cerevisiae produced by a special fermentation     process and patented drying process.

 Appearance : Free flowing granular cylindrical rods

 Color  : Light fawn color

 Odor  : Neutral to slightly fruity odor

 

APPLICATIONS

 Instaferm® GOLD Instant Dry Yeast is designed for optimal use in sweet doughs and other yeast-raised  prod-ucts containing over 10% sugar, such as sweet breads, rolls, bagels, Danish, pizza, donuts, etc.
